Mexican Baked Sweet Potatoes

Prep: 5 minutes Cook: 45 minutes



  • 2 large sweet potatoes or yams
  • 2 cups Basic Mexican Bean Filling


Preheat oven to 350 degrees.

Scrub the sweet potatoes and prick with a fork. Place on a baking sheet and bake until tender, about 45 minutes.

Meanwhile, make the Basic Mexican Bean Filling (recipe can be found in Miscellaneous). Or reheat it if you've already made it.

Split open the baked potatoes, top with the bean filling and any of the options listed below.

Optional toppings:
Tofu sour cream
Chopped cilantro
Sliced jalapenos
