Gazpacho Verde Salsa

Ingredients

  • 2 scallions, sliced thin
  • 1 jalapeno or Serrano chile, seeded and minced
  • 1/2 English cucumber, seeded, 1/3 inch dice
  • 1 small zucchini, 1/3 inch dice
  • 1 cup cherry tomatoes, halved
  • juice of 1 lime
  • 2 tbsp EACH cilantro and mint leaves
  • 1 avocado, diced (optional)
  • salt to taste

Directions

Combine all ingredients in a mixing bowl.
