Breakfast Bean Burrito

Serves:Makes 4 small burritos

This is such an easy breakfast to make if you plan ahead a bit. Use leftover beans from dinner a night that week, scrambled tofu from breakfast a couple of days ago, and there is hardly anything else left to do but a bit of reheating and chopping.


  • 1 cup mashed beans (we like cranberry beans, but pinto or black beans work well)
  • 1 cup left over tofu scramble
  • 1/2 cup corn
  • 1/2 cup chopped steamed kale or spinach
  • mild salsa
  • tortilla of your choice


Heat a tortilla on a non-stick skillet, spread a thin layer of beans, then scrambled tofu, sprinkle on corn and steamed greens, add salsa and roll.
