Sherried Rice

Prep: 30 minutes (cooked rice needed) Cook: 20 minutes

Ingredients

  • 2 onions, cut in half and sliced
  • 1/2 pound mushrooms, sliced
  • 2 cloves garlic, crushed
  • 1 stalk broccoli, coarsely chopped
  • 1/2 head cauliflower, coarsely chopped
  • 1 zucchini, cut in half and sliced
  • 1/2 cup snow peas
  • 1/4 cup sherry
  • 1/4 tsp curry powder
  • 1/4 tsp allspice
  • 1/4 tsp nutmeg
  • 1/4 tsp herb seasoning mix
  • 3 cups cooked brown rice
  • 1/4 cup white wine

Directions

Place onions, mushrooms, and garlic in a large non-stick frying pan with the wine and cook, stirring frequently for 5 minutes. Add broccoli, cauliflower, zucchini, snow peas, the sherry and the seasonings. Cook and stir over medium heat until vegetables are tender, about 10 minutes. Add the cooked rice. Heat through and serve.
