Vegetable Orzo

  • 1/4 cup water
  • 1-2 zucchini, diced
  • 1 carrot, grated
  • 2 shallots, diced
  • 3 cups vegetable broth
  • 1 cup orzo
  • pinch curry powder
  • pinch salt
  • several twists freshly ground pepper


Place the water in a large non-stick frying pan. Add the zucchini, carrot and shallots. Cook, stirring occasionally until softened, about 4-5 minutes. Add the vegetable broth and bring to a boil. Stir in the orzo and curry powder. Cook until orzo is tender, about 5-6 minutes. Stir in the salt and pepper. Cook for another minute and serve hot.
