Mexican Rice Casserole

Prep: 10 minutes (need cooked rice) Cook: 40 minutes

Ingredients

  • 3 1/2 cups cooked brown rice
  • 17 ounce can cream-style corn
  • 15 ounce can black beans
  • 8 ounce can tomato sauce
  • 1/2 cup green onions, chopped
  • 2 tbsp green chilies, chopped
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/8 tsp crushed red pepper flakes

Directions

Preheat oven to 350 degrees. Place the rice in a large bowl. Add remaining ingredients and mix well. Ladle into a casserole dish. Bake, covered, for 30 minutes. Uncover and bake for 10 more minutes.
