Himalayan Curried Soup

Prep: 5 minutes Cook: 20 minutes (cooked rice needed)

Ingredients

  • 1 onion, chopped
  • 1 stalk celery, chopped
  • 4 1/2 cups vegetable broth
  • 2 1/2 cups cooked brown rice
  • 1 1/2 tsp curry powder
  • 1/2 tbsp soy sauce (optional)
  • 1/4 tsp ground coriander

Directions

Place 1/2 cup of vegetable broth, onions and celery in a saucepan. Cook, stirring occasionally for 5 minutes. Add remaining ingredients. Cook over low heat for 15 minutes.
