Harvest Moon Soup

Ingredients

  • 1 onion, chopped
  • 1/2 tsp bottled, minced, garlic
  • 1 yellow or orange bell pepper, chopped
  • 3 tbsp unbleached flour
  • 3 1/2 cups vegetable broth
  • 2 zucchini, diced
  • 2 cups corn kernels
  • 2 cups fresh tomatoes, chopped
  • 1 tbsp soy sauce (optional)
  • 1/4 tsp cumin
  • 1/4 tsp dill weed
  • 1/8 tsp white pepper
  • 1 1/2 cups non-dairy milk

Directions

Place 1/2 cup of the vegetable broth in a large soup pot. Add onion, garlic and bell pepper. Cook, stirring frequently, for 3-4 minutes. Mix in the flour. Add remaining broth, zucchini, corn, tomatoes and seasonings. Cover, bring to a boil, reduce heat and simmer for 10 minutes. Stir in non-dairy milk. Heat through and serve.
