All Hail the Potato Challenge!!

Anyone up for a potato hack (Mary's Mini) this week?

Starting Moday, March 18 through Friday, March 22, eat nothing but potatoes, fat-free condiments and veggies if you like. Post your meals and favorite potato recipes here.

Bonus for recipes or ideas that use cold potatoes, so we get the benefits of more resistant starch, the super fiber.

Sounds good to me. Glad it's only 5 days, though....I can keep telling myself, it's only 5 days!!! something of an elimination diet for me. I'll be avoiding fruit for those 5 days, just potatoes and vegs.

I am in too! I am already eating potatoes as I write this. baked, no sauce.

But I see many variations of potato salad in my very near future.

I am eating one right now. Cooked and cooled red potatoes chunked and tossed with lemon juice, salt, pepper, sliced grape tomatoes, green onion, romaine and chickpeas. Pretty good for foraging in my sister's fridge after a nice run. The beans DQ it from the potato hack, but there were not enough potatoes on hand!

That sounds really delicious! I must admit I am a little jealous.... :-) Seems simple enough to make, I will try it out this week.

Any kind of potatoes are a-okay!

I've got my potato stash and ketchup, mustard, BBQ sauce, malt vinegar and spices. I am actually looking forward to this week.

BTW, whoever it was that mentioned smoked paprika on a thread here a while back, come over here and let me give you a hug. It's awesome.

The smoked paprika, do you just add it plain to potatoes, or mixed with something?

I've been sprinkling it on mashed potatoes.

Where do you buy the smoked paprika? I keep looking but have not found it anywhere, at least in the regular grocery stores.
