Easy Lunch Idea

Postby cowpie » Tue Apr 24, 2012 11:39 am

Open a can a black beans; drain and rinse them, and put them in a bowl. Stir in lots of barbecue sauce ( I use KC Masterpiece). Lay a line of the beans down a whole wheat tortilla and top with chopped lettuce, tomatoes, and onions. Roll up and enjoy! I'm absolutely in love with this, and it's so easy.

KC Masterpiece doesn't have any oil, but it does contain high fructose corn syrup. I think Dr. McDougall used to recommend that sauce. That's why I bought it. I don't see it on his list anymore, though.

It's a barbecue bean burrito! Brilliant!

I might add some rice.

I'm going to try this one. Thanks!

Why bother with salsa from a jar when it's so easy to make your own? A few tomatoes, green chiles, onion, lemon juice, salt, in the blender, bazinga! Tastes so much better.
My type 2 diabetic husband and I have lost a total of 65 pounds thanks to Dr. McDougall. I'm cooking for a household of 7 McDougallers, and enjoying good health and a renewed sense of well being.

Quick and easy, just how I like to cook. Thanks for the idea cowpie, I made a few today. I picked up a bottle of non-HFCS BBQ sauce today and a can of black beans, mixed it up and was good to go! I might have to start making these at work for lunch.

That's my favorite kind of cooking too, stoumi. It's a sloppy sandwich to eat, but it sure is good. Take lots of napkins to work with you...lol.

Oh yes. This is definitely making it on the menu for this weekend. Nice and easy. I love TJ's bbq sauce. Can't wait to eat this.

This is such a great summer lunch idea. I also will have to try Nordgirl's homemade salsa, which we use a lot of.
