The conventional wisdom among the public is that if you have Type 2 diabetes, you need to stay away from carbs.
First off, some carbs are just junk food. Sugar, soda pop. White bread. But other foods that are high carbohydrate are very healthy.
What if it was fat that actually created the conditions for Type 2 diabetes, namely insulin resistance?

Diabetes
https://www.drmcdougall.com/pdf/Diabete ... pinion.pdfWhat in their diet can cause healthy individuals to get diabetes so easily?
Three harmful components in the rich American diet cause adult-onset diabetes. First, the fats and the oils, which account for 40 to 50 percent of the calorie content of our diet, act by interfering with insulin activity.43-4' The cells of the body become unable to respond to the natural insulin produced by the pancreas and also to insulin injected by means of a syringe. This effect of fats and oils has been known for more than fifty years.43
In 1927, Dr. S. Sweeney fed young, healthy, medical students for two days on a diet very high in fats, consisting of olive oil, butter, mayonnaise made with egg yolks, and 20 percent cream." Then he gave them a glucose tolerance test. All of his students showed blood sugar levels high enough to classify them as diabetic. Some were severely diabetic."
In another experiment employing the same students, before running glucose tolerance tests, Dr. Sweeney fed them simple and complex carbo-hydrates consisting of sugar, candy, pastry, white bread, baked potatoes, syrup, bananas, rice, and oatmeal.'" After this high-starch and high-sugar diet, maintained for two days, glucose tolerance tests showed that all of them were normal, without evidence of diabetes.
From Dr. Sweeney's experiments and others, we can conclude that one way to cause diabetes in someone is to feed them lots of fats and oils. These ingredients are the greatest dietary insults to the body, causing not only diabetes but all sorts of other interferences with normal functions that, if they are allowed to continue, will provoke recognizable diseases.
As surprising as this may sound, carbohydrates, both simple and complex, have effects opposite to those of fats. Carbohydrates can actually increase the power of insulin. Even sugar fed to a diabetic does not make control of thethlood sugar more difficult but actually makes it a little easier. When subjects with mild diabetes were changed from a diet containing 45 percent simple sugar to one providing 85 percent sugar, fasting blood sugar levels fell and results of the glucose tolerance test improved." The conclusion is clear: a high-carbohydrate diet, even one loaded with simple sugars, will increase the sensitivity of body tissues to the action of the insulin it is producing. The Real Cause of T2 Diabetes: Fat, Sugar or....
