I was wondering what would be the best foods to begin with transitioning to a plant based diet for someone whom has struggled with gut conditions for a significant amount of time.

Obviously transitioning to a high fibre starch based diet after a long time on detrimental diets such as low fodmap, keto etc will cause a great deal of bloating, loose stools etc

What foods are best to eat during the transition that will be less reactive? eg is it better to eat white rice and white bread initially?

If bloating and loose stools are severe is it okay to push through or will this not speed up the healing process and should be implemented slower?

Is pasty/ sticky stools a normal symptom to push through whilst adjusting especially with high fibre foods? Or would this suggest an alternative transition? keto type diets resolve this but agree they are not appropriate
