As a sign of my commitment to following the McDougall program in 2020, I am going to list my daily menu here :-D

I typically only eat 2 big meals a day....although sometimes a "meal" is spread out over a few hours haha! Especially when I am at work and constantly being interrupted. Hopefully others find this helpful as well.

Day 1

Meal 1: Baked zucchini
Salad with romaine, arugula, spring mix, beets, mandarin orange. Dressing was balsamic vinegar and mustard.
Mashed sweet potato, chickpeas, dill, and creamy lemon sauce

Meal 2: Steamed carrots
Mashed sweet potato, chickpeas, dill, and creamy lemon sauce

Day 2

Meal 1: Baked zucchini
MEGA sized salad with romaine, arugula, spring mix, beets, mandarin oranges and great northern beans. Dressing - balsamic vinegar and mustard.

Meal 2: Steamed carrots
Black bean soup (my favorite!)

Keeping a journal is great. It's actually helped me quite a bit, and I use it to just get my thoughts out of my head.

Someone's going to say it, so it might as well be me....don't forget your starches, starches and more starches. Add the potatoes and rice and oats and other grains and squashes and such.

You don't want to get hungry.

Thanks for the reminder! Typically I will make a HUGE pot of food to last every 2-3 days, and I will almost always serve it over potatoes or rice (even though it will already have a starch or 2 in the pot). I am miserable when hungry so will definitely up my starches if I am feeling hungry!

I am curious how you make your creamy lemon sauce. I am always on the hunt for sauces to enhance my veggies.

Here is the recipe:

1.5 cups chickpeas
zest and juice from 1 or 2 lemons
water (to get to desired thickness)

I blend all 3 in a vitamix. Thats it!

Those meals for today look ON POINT, to me! You seem to be hitting all the dietary-related points of the checklist. Kudos.

Raw baby carrots
Lentil and potato* stew
Blueberries with a splash of almond milk

*Edited to add the potato....forgot I had added potatoes to the stew.

Baked zucchini
Chana masala (This receipe https://www.forksoverknives.com/recipes/slow-cooker-chana-masala/#gs.qlndly but with zucchini instead of potatoes since I was going to eat it with potatoes anyways)
Yellow potatoes
