Hello October 1, 2019

Starting a new journal since I seem to be committed now to eating MWL way. It's so tasty and yummy.

Well, my trip to NM to visit an old friend was not a success! Long story but I got sick with a virus and now head cold, and anxiety disorder flared up. I was sooooo glad to get home. I couldn't really eat much while there; bluecorn pancakes were very good. So at least I didn't gain weight. Now I am resting and focusing on eating healthy to get well. Breakfast was rice and beans and half an orange. Today will cook veggie chili in the crockpot and probably split pea soup with potatoes, carrots and celery. I emptied out my refrigerator before traveling, so have to stock up!

Today is the 1st day I feel better after this virus, although very congested. I have tried to eat right, but honestly I just wanted beans and rice. And the scales show I am up 1 lb too. So, doubling down today to get back to lots of veggies and leafy greens. My veggie chili is yummy! but I need to make more food. I'll roast potatoes and carrots and cauliflower today. And probably make that split pea soup with potatoes, carrots, celery. I think I'll add some collard greens to it. I'll start with oatmeal and almond milk for breakfast, with ground flax and hemp hearts.

Our weather dropped 20 degrees, unseasonably low. Breezy but still good for walks. I have 2 or 3 community projects each week, volunteering at my grandson's crowded elementary school, and today I feel well enough to start another painting. Plus have a good book to finish.

Fall is coming in fast here in the NW. Temps are below average. Skies remain clear and the air is crisp. Beautiful days to be outside. I finally feel much better after a virus. Lost .6 of the 1# I gained. Back on the MWL program and am confident I will have a lower # for next week's weigh in.

Yesterday I was surprised how tasty was my dinner. I steamed an acorn squash and mixed it with peas. Very filling too. Time to add some other recipes to the rotation as I am a bit bored with the usual stuff. Satiety is key for me, to not always be hungry. So I am learning to eat more fiber (calorie density is important). I'll roast potatoes and carrots today, make another soup recipe. Already have rice cooked. Plums are tasty right now.

Today I volunteer at the elementary school. I like reading with struggling readers. And I hope to do another painting.

I have a busy day today so have done some laundry if I want clean sheets on the bed. And I have some black bean veggie burgers in the oven right now. They are very good and filling, although now I have a sink of dirty dishes! https://plant-based4health.com/recipes/ ... mushrooms/ I don't saute onions in oil as the recipe says. Could carmelize onions for topping I suppose.

Definitely use the quick cooking oats, and you could add 1/4 cup diced mushrooms if you like them. 8 minutes at 450, or freeze them to cook later. Make great burgers. I usually makes 8, but I made mine larger. This also makes great 'meatballs' for pasta.

I am helping my son finish painting his house, which is great exercise for me. 2 hours is my limit. Gotta run!

I started with steamed spinach because I had a bag of spinach leaves that had to be eaten! I prefer to eat spinach that has been steamed. Interesting how 1 big bag steams down to 2 small servings! And later I will have one of the NY Times veggie burgers for breakfast because it is filling and tasty, along with the last of the veggie chili. Dinner will be oatmeal with blueberries, flax seed and hemp hearts. Sometime today I will roast potatoes and carrots. So tasty and filling.

And another 1-2 hours helping my son paint his house. I like painting and it's good exercise for me. Feels good to be in the sun (that vitamin D!).

Hi Marsha,

Thanks for posting the link for the veggie burger recipe. I plan to try it the next time I want to spend some time cooking. I love veggie burgers and I'm always on the lookout for a good recipe! Mine either fall apart or don't have any flavor.

I love your comments about painting. We have an old house with wood siding. We painted it this past spring. It is satisfying (hard) work. :)

I love this soup! so will make it today plus roast veggies (potatoes, carrots, cauliflower, sweet potatoes). I will make another batch of them too. Be sure to use the quick-cooking oats as that seems to keep them from falling apart. And I use a tomatoes with mild chilis because this recipe does need seasoning. Or even a dash of BBQ sauce could be interesting.

Battling allergies and probably a simmering low grade sinus infection. I finally went to the MD and will get allergy testing. It's an ongoing problem but maybe can get some answers. Still holding at the lower weight # and hope to shave a few ounces off it for Thursday's weigh-in. So far I am finding eating a lot more potatoes is very satisfying and filling. Today I will finish up my simple stir fry of black beans, a veggie mix of quinoa and chickpeas, plus veggies. Also have to cook more veggie chili. I have more roasted carrots and cauliflower to eat. Good because today is a volunteer day for me. I walked yesterday; rains have arrived so soon I will have to retreat to the gym to get in some exercise.

What are you eating?

new # today, 189.4 Haven't been in the 180s for maybe 20 years. yay!!! It renews my determination and motivation to eat MWL. Potatoes are turning out to be my favorite starch because they provide satiety. Today I have an acorn squash to bake, so filing and good. I eat it with peas and veggie chili. I will probably do another quick & easy stir fry, can of beans with frozen veggies and serve with brown rice. And I need to eat a piece of fruit or two, plums right now. Apples are so good now too. I wonder if I can enjoy a MWL apple crisp type dessert?

Congratulation on the new low!

Potatoes are definitely one of my new favorites. I love them in my airfryer with ketchup, but I'm going to have to start making my own ketchup as it's just too sweet.

I've also been eating a lot of apples. Let us know if you come up with an apple crisp recipe. I tried making one some time back with almond butter (instead of butter) and it really didn't work out how I would have liked. Maybe just baking the apples with a nice homemade granola (or fat free) on top would be better. Put the granola on at the end, just warm it up. Perhaps that's enough to give you the idea of of an apple crisp.

Thanks Annette. I think potatoes are the key to the weight loss. Yesterday the scales showed another 1# off, surprised me! Actually I was a little shocked. And the best news is that they provide the satiety I need. I rewatched ForksOverKnives and saw Dr. Lisle's discussion of why caloric density foods fill us up, triggering all the satiety messages to the brain. I get it now!!

I haven't found an apple crisp recipe yet. I found one here in the recipes somewhere, yams and apples. I might try it.

Yesterday the scales showed another 1# gone. Surprised me, actually shocked me. I am eating a lot of potatoes now, and think that is the key to the satiety I need. I find my appetite is suppressed too. Love it.

I have apple slices to eat today. Breakfast will be oatmeal with blueberries, ground flax seed, hemp hearts and almond milk. Later today I will make a red lentil sauce found in the MWL cookbook, to be served over more potatoes! I also need something green so have broccoli and spinach to be steamed.

This morning I will be in the pool for water aerobics.
