Mark, I love your cooking. How do you make funeral potatoes? If you take out the cheese, butter, sour cream and chips, all you are left with is...potatoes?

Ha! I actually laughed out loud when I read that - SO true!
I basically use this recipe  https://www.brandnewvegan.com/recipes/v ... l-potatoes

I substitute my own cauliflower "cheese" sauce for the one in the recipe; and, if I'm just making it for my family, I leave out the topping. It is one of my favorites, although the rest of my family finds it to be a bit spicy.

Thanks, Mark! I love the idea of cauliflower cheesy potatoes. I will put this in the queue of new recipes to try.

I’m still feeling quite well, although my pain was somewhat more intense today. I treated myself to a big helping of nice cream today, being mindful that it can lead to passive overconsumption. I think it is something I will start including once a week, but probably ONLY once a week.

I'm loving the 50% greens/50% starches on your plates. Do you sprinkle red pepper flakes on stuff, or is that some other type of seasoning I"m seeing?

*note to self: buy some California blend veggies* they look so GOOOOOD!

Thanks!

I season my food with lemon juice, cider vinegar, Mrs. Dash and dried hot pepper - so you are correct, that is what you see in many of the pics.
