Plan for today (switched meals around a little):
B: Soup, waffle iron hash browns
L: Sweet potatoes and slaw (I put a little salsa in the lunchbox, too)
D: Harvest grains hot cereal
S: Grapes, slaw, soup

Actual:
B: :thumbsup: (added a little ketchup)
L: :thumbsup:
D: partner bought Thai food; I had vegetable soup, spicy eggplant, and rice
S: grapes, raw veggies :thumbsup:

Plan for tomorrow:

L: Leftover Thai food; grapes; slaw
D: Partner is making jackfruit tacos
S: Sweet potatoes, slaw, grapes

I poured too much pepper into the lentils, so they're pretty spicy, but still really good. Only one sweet potato left, so lentil soup is the order of the day tomorrow for pantry month.

S: fruit, sweet potato

S: banana (at the E.R. coffeeshop -- mom's heart was acting up today; she seems fine now) :thumbsup:
L: left my lunch at work when I ran to the E.R., so I ate sweet potatoes, slaw, and peaches when I got home. :thumbsup:

D: jackfruit tacos (no oil, partner was experimenting) :thumbsup:

Actual:
B: 1/2 cup lentil soup (not hungry and on the way to dentist) :thumbsup:
S: 3 jujubes & some pickled daikon and carrots (out shopping, got hungry, found something compliant to buy to eat quicky) :thumbsup:
S: "Heart healthy mix" of raw nuts and dried fruit. Was out shopping again. Should have learned and taken some food along, but I didn't, and this was the best thing I could find there. I was bummed because it breaks my MWL streak and I don't even really like raw nuts, but it did the trick.
L: white rice bowl with broccoli and carrots and teriyaki sauce; diet soda
S: handful of vegan (but not McD) snacks from a monthly snack box I get. I should probably cancel that subscription, huh? :?
D: Lentil soup :thumbsup:

Actual:
B: sweet potatoes (mom wanted me to come over and play cards, so I took raw sweet potatoes with me and nuked them in her microwave (we don't have one) :thumbsup:
S: rice crackers, a peach
L: cantaloupe (would be a :thumbsup: but I ate a ton of it)
D: lentil/rice loaf wasn't great; made szechuan eggplant, brown rice, peas -- still not great. Ended up eating a bowl of soup just to get something I actually liked. I ate a lot more calories than I do when I'm eating simply. Maybe the lesson is to just stick with simple foods for now -- baked starches, fresh veggies/fruits, soup.

D: partner made stuffed poblano peppers. Stuffing was corn, okra, and spices. Side of fat-free refried beans. :thumbsup:

Finally a good MWL day! I've been having trouble lately making it through the whole day MWLing.

How does that work for you eating the same thing a couple meals in a row? I want to do that, but always get bored and end up making something different then wasting (or rather composting) the leftovers

As long as I like the food, I can eat it several times in a row without getting bored. I know it doesn't work for everyone, but I like it because I cook once and eat three times, but I don't have day-old leftovers to deal with the following day. I'd rather eat it three times in a row than three nights in a row.

Idgie, so sad you dropped your waffle on the floor!! I wanted to tell you that I've been on a veggie loaf jag. I just finished the third one! I'm going to take a break so I don't get burned out with them but they are so easy to reheat. My latest had white beans and sweet potato. Very good! I also discovered a jar of pimentos mixed with tomato paste (approx. 2 Tbsp) makes a tasty topping to add before baking. Yum!

Mmm! I made waffle iron hashbrowns for brekkie yesterday. WOW! scrumptious and SO SIMPLE to do! I plan on doing it pretty often :nod:

I think you're right about keeping it simple. I like that you're big-batching then eating the same meal frequently. It makes things so much simpler. I do the same thing, and it works for me.

I looked but didn't see your recipe for taro/radish cakes. Sounds quite intriguing. Good going on those menus. Keep it up!
