Spicy Sausage Recipe (Lentil-Rice-Oats)

Pepperoni

1st successful spicy sausage-pepperoni based on lentil burger. Use like hot sausage. I freeze the patties to thaw and use in other recipes. The adobo sauce gives a good base layer of warm flavor, and arbol chilis add heat.
Makes 6 patties.

Uses
- Pizza Topping
- Baked Pasta Spinach And Sausage
- Spaghetti With Marinara Sauce And Sausage

PREPARATION
- Adobo Sauce
- Marinara Sauce

MAIN
- 1 cup brown lentils, cooked
- 1 cup brown rice, cooked
- 1 cup oat flour (oats, pulsed in blender 5x)

FLAX EGG
- 1/4 cup flax meal
- 1/4 cup water

SPICES
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp cumin

FLAVOR
- 1/2 cup Marinara Sauce or other reduced tomato sauce
- 1/2 cup Adobo Sauce
- 6-8 arbol chilis ground or 2 Tbsp crushed red chili flakes

Mix dry ingredients together: lentils, rice, oats and dry spices. Mix wet ingredients together: tomatoes or other steamed vegetables, flax egg and tomato paste. Mix dry and wet ingredients together. Allow brief 5m rest for oats and flax powder to absorb moisture. Shape into patties or balls. Bake convection toaster oven 400F 20m.
