I was trying to figure out where to keep a list of the meals I try that work well for me. I hope it's okay if I just put a thread here.

Easy veggie rice soup

Instant Pot for 10 minutes:

Big bag of mixed veggies
Cup of frozen okra
Small bag frozen chopped onion
Can salt-free tomatoes
3-4 quarts low-sodium veg broth
6 whole cloves garlic

Release pressure.

Add a cup of instant brown rice. Let summer 10 minutes and eat. Makes lots.

Andersen's split pea soup

Made a double batch of Andersens split pea soup today. But I made it in the Instant Pot. 10 minutes, natural release, blended with the stick blender. Really good and so much cheaper than canned.

Simple cabbage salad

I think I saw this in either Starch Solution or the MWL book, but I kind of shrugged and ignored it. I have been really enjoying my cabbage salad lately, and it's just a huge bowl of chopped cabbage tossed with a whole mess of fat-free bottled salad dressing. I'm going to start making my own dressing once I use up the bottled stuff but this is a great salad. Today I added beets and sliced tomatoes.

I’m making this today. Noticed that Andersens strained out the solids (fiber) from the soup. Since your post described using a stick blender, sounds like you kept the solids?

My own split pea soup uses much less split peas, much more vegetables, and some potato. Can’t wait to try this version.

I don't strain the soup; don't see a need to. My own split pea soup, I don't even blend -- I leave in the peas and chunks of carrot and onion. But I was in the mood for the canned stuff, which I think is too expensive. Another nice thing about this recipe is it tastes like the canned stuff (which I love), but without the vaguely tinny taste of the canned stuff. Win-win.

Super easy pumpkin soup

1 part pumpkin puree
1 part vegetable stock or water

Stir and heat.
