Speaking of Tofu . . .

On another thread, Debbie mentioned how hard it is to find tofu where she lives. I rarely buy it myself anymore, but with summer coming, I thought maybe my husband would like a change from his 2 hummus on Dave's Killer Bread (Once again oil-free!!) sandwiches at lunch and may want to have some of the burgers, spreads and salads Mary McDougall demonstrates in the (now free) McDougall Made Easy https://www.drmcdougall.com/health/shop ... made-easy/ and McDougall Made Irresistible https://www.drmcdougall.com/health/shop ... esistible/ videos.

I remember I was making many of these many years ago, even before these DVDs came out, and whatever I made would be long gone before they had a change to age out of the refrigerator. But now, he would be the only one eating them. For those of you who are using tofu in these and other recipes, how long do you think they would last in the refrigerator? Would 5 days be too long if I made, say, the Mock Tuna or Eggless Salad https://www.drmcdougall.com/pdf/mme_lesson_5.pdf on Sunday for that week's lunches?
