Multiple diet restrictions

I find it very difficult to find recipes I can use. In addition to recipes that don't include meat, eggs or dairy, I cannot have gluten, tapioca or beans as they bother my digestive system. There are also several foods that I dislike such as cucumbers, eggplant, melons, etc. How can I find recipes that I can use that I will like, make me feel satiated and not get bored with?

You might start with Jeff Novick's SNAP meals. Keep in mind that beans are optional. If you don't like them, remove them.

I like to convert regular recipes into plant based recipes with some substitutions.
You might also find that your tastes can change with time, or that some of your sensitivities clear up with time and adherence.
