vegitable combinations

Hi,

When I don't have letovers for lunch I have been doing a combination of three items. For example I did brocoli, sweet potato and rice, and I did pineapple, sweet potato and rice. Does anyone have any other combinations that are good? I'm hoping to add a little variety.

Beans, rice, salsa?

Cook 1 cup brown rice, stir in 1 can black beans (drained). Portion out and top with salsa. Yum!

Cook one cup old fashioned oats in microwave (3 minutes).
Stir in fresh chopped spinach.
Sprinkle ground black pepper (optimally salt)
Add a bit of Salsa optionally.

Tasty, quick and satisfying.
One of the easiest recipes.

Corn, beans, fresh tomatoes, salad greens.

Mashed potatoes mixed with corn.

Oatmeal cooked with broccoli and garlic, soy sauce. Also good with cauliflower or spinach. I heat the water, then add the broccoli, when it comes to a boil, add the oatmeal and cook as usual,

Rice mixed with steamed broccoli. Also good with green beans and prepared mustard.

sweet potato, crushed unsweetened pineapple, broccoli

Yet another favorite is stir fry mix on top of quinoa cooked with veggie broth and a bit of low sodium tamari sauce sprinkled on top

Another favorite is mustard mashed into a potato and a huge helping of mixed veggies on top.

These are super easy with very little prep work as I use frozen veggie mixes usually from Costco. We find their organic frozen veggie mixes delicious.

When I have the time to put into a meal a kitchen sink salad on top of a baked potato - actually, just about anything on top of a baked potato. When I prepare a soup or a stew, it usually ends up on top of a baked potato.

A quick meal with just a microwave...

brown rice, butternut squash, kale, fresh salsa

I buy all of these items from Trader Joe's. The brown rice packets are frozen and cook in their own packet for 3 min in the microwave. While it is cooking, add the other items into a casserole dish. When the rice is done, add it to the casserole dish and put it back in the microwave until the butternut squash is done... maybe 7-8 min.

The salsa can be cooked in with the rest of the items or added cold.
