The worrying bit starts at about 1:33. It says you have to rinse quinoa before use because of a risk of something awful called leaky gut. There's dozens of videos about how great quinoa is but here we have one saying it can cause catastrophic damage.

What precautions (if any) are you taking?

So far, I've just used it three times to bake quinoa bread. Does baking destroy the saponin?

Although I see there have been a few threads about saponin I can't see one in connection with leaky gut.

A quickie Google search brought up this article from 2014 on why we have to rinse the saponins off the quinoa:

Once they're rinsed off, they're as healthy as any other grain.

Unless the package of quinoa says it's already been pre-rinsed, somewhere it *will* say to rinse it well before cooking. Even on packages of pre-rinsed it may even say it.

So, just rinse the quinoa and all is well.

They lost me at “anti-nutrients”. Sounds like more pseudo-science to me. Remember when they said tomatoes were bad for you?
