I had leftover roasted Anaheims and Pablanos from tamale making in addition to leftover mashed potatoes and cauliflower cream sauce. Well, I'm here to tell you that mashed potatoes with creamy roasted pepper gravy is sensational. It will be a new staple around here.

What do you like for thickening the gravy? I like rice flour.

I don't use any thickeners. I just boil and puree cauliflower, onion, garlic, celery, herbs, and spices. If I want it brown, I caramelize finely chopped onion and sliced mushrooms and then stir in the cauliflower puree. So, pretty much it has zero calories.

That sounds wonderful. I think adding some of the peppers into your mashed potatoes would have been a tasty addition too if you didn’t want to make gravy.
