Apple coleslaw

One of the weekly specials for Lucky's this cycle is "apple coleslaw". I went to the store to look at it for some inspiration, what with it being apple season and all. I suppose it's actually a measure of how long we've been vegan, and healthy vegans at that, because I'd actually forgotten that all that is called coleslaw in the US is drowned in multiple forms of dairy and other greasy grimy gopher guts. I know, gasp, how could I possible forget that!? Anyways, now I'm driven to create something healthy. Tomorrow morning is farmers market day. I can get some more fresh cider, the kind that you have to keep cold and drink before next week's market. I suppose I could reduce some for the dressing. Help me think!

green cabbage
red cabbage (?)
carrot
apple, shredded or chunked?
celery
green grapes (bought some this morning)
any nuts?
cinnamon?
what/anything else?
farm fresh pears are also available

Have you seen Straight Up Food’s Creamy Coleslaw? It has apples and raisins.
