Too hot to cook?

I don't think I have "too hot to cook" days. I live in Phoenix. It's pretty much always hot. Mostly I have "too lazy to cook" days. Probably more of those than I care to admit. But yesterday was a non-lazy day. I made banana walnut muffins, a pasta salad, and a big pot of chili. :nod:

What are your favorite too hot/too lazy meals? Feel free to share them in this thread.

My hot-weather faves:

Big salad with cold cooked white or sweet potatoes, or with beans or cold cooked grains.
Grain salads like tabouli.
Cold soup.
Big bowl of fruit (not MWL, but sometimes it's perfect).
Raw corn on the cob.
Hummus and bell pepper strips or carrot strips.

Or stuff that heats up quickly:
Soup
Bean tacos
Leftovers

Hi,

I guess that I am pretty lazy in general!! (No heat needed!!)... :D

I love to use slow cooker to cut and dump great soups / stews / chilis. Can eat them cold or at room temperature too.
* Red Lentil Chili
* Split Pea Soup
* Vegetable Stew
* Minestrone


I use the microwave too (know some folks don't)...

*Frozen rice
*Frozen corn

*Potato


I love just roasting veggies in the oven on parchment paper (450 for 20-30 minutes usually works). After cooked, may season with various herbs - and / or do splash of low sodium tamari or balsamic vinegar.
* Bell peppers

* Onions

*Mushrooms
* Garlic

*Zucchini

Will add these plus raw (red onion, hot peppers, bean sprouts ) to starch + roasted veggies.

Fruit salad!!!

Cold bean salad with veggies

Raw veggies / crudites - with or without salsa or hummus
I ❤️ the McDougall program!! It has given me a new lease on life.

Sandwiches. There are a few spreads out there, made with peas or garbanzos, that make good samwich fillings. Add sliced tomato, lettuce or spinach, mustard...yum!

Totally had that going on today. Made a chickpea salad to stuff in whole wheat pita pockets. It’s also great with cucumbers and radishes as a dip. I like to stuff the pita pockets with cucumber and radish slices, a spread of Dijon and scoop of chickpea salad.

Chickpea Salad
2 cans chickpeas, drained
3 tbsp tahini (optional)
Cilantro
Green onions
Lemon juice
Water or bean juice

Put everything in a food processor until you reach desired consistency. It can be as chunky or smooth as you like.

Also, I lean heavily on my instant pot in warm weather. All seasons, really. Made some small Yukon gokd potatoes today. Yesterday was pinto beans. It’s nice to have some stuff in the fridge to nuke real quick to munch on.

Couldn't be more timely! I have 7 zucchinis in my fridge that I bought on sale, I had no idea what to do with them (other than steaming), so this is perfect!

I lean heavily on my electric pressure cooker year round! ;-)

It's fresh corn season, something to be celebrated. The kernels from two (three for DH) ears of corn, barely microwaved. Add halved cherry tomatoes (also from the farmers market) and herb of choice, mint is especially nice. Summer in a bowl. Corn, peaches, and cucumber is nice together as well, with a bit of ground coriander.
