Ridiculously easy curry

Tossed this in a pan the other day so that I could heat something quickly and not heat up the apartment too much, and it's so good! I have been eating it cold and hot for three days and it's still really yummy.

1 can of whole new potatoes, cut in chunks
1 can of diced tomatoes, not drained
1 onion, chopped
1 cup (or you can use a whole can if you want) cooked or canned garbanzos
1 tbsp Madras curry powder (or any favorite spices -- I bet this would also be good with Mexican or Italian spicing)

Throw everything in a saucepan, bring to a boil, reduce heat to medium, and boil until the sauce gets thick, about 20 minutes. Since it's all fully cooked, you could also drain the tomatoes and just heat it until everything's hot, but I like the way the flavors blended.

I want to give it a go, but probably will use boiled potatoes. So, curious on how many oz. in can of new potatoes?

This looks tasty!

What is that large veg at the top of the pic? At first I though it was a sweet potato because of the color but its not in the listing?

I think I may try it with some garam marsala :-)

Geo, I usually use a mix of Indian spices in my curries -- mustard seeds, turmeric, coriander, etc. -- and then finish with garam masala, but this is a down-and-dirty recipe. And yes, that's sweet potato on top, not part of the curry recipe.

I made this last night, using yellow potatoes that I cubed and boiled, since I didn't have any canned potatoes. I also put a pinch of red pepper flakes in, and about 1/2 c. of frozen peas and served it on a bed of spinach/baby kale blend. YUM! I brought some for lunch today. It is delicious, and SO easy! I'll be making it again for sure.

I did an adaptation of this in the Instant Pot, (with carrots added for sweetness). Totally easy and fun.

Ate it all, will make more :).

Idgie, I made this up using Italian seasonings and it was pretty good, but I knew it had potential to be lots better. Today I made Alton Brown's Taco Potion (a particular mix of dry spices) and used that instead of curry or Italian. It was great! I could not find hot smoked paprika, but used plain smoked paprika, and thought it was wonderful. Here's the link:
