I had some "green rice" recently at a Tex-Mex restaurant that was delicious. It was pretty simple: rice cooked with cilantro and lime juice. I'm working on cutting way back on my soy sauce habit and this combination was great. Served with a salad with more cilantro and veggies. I'm going to add black beans to mine.

Sounds tasty! Do you know how much cilantro and lime juice is used in relation to the rice?
