sub for oil in savoury muffins?

I'm making a savoury muffin for the first time. Just wondering what I can sub for the oil in the way we use apple sauce in sweet dishes.

I found a website which suggests either tofu or flax seed.

Any thoughts guys?

You could probably use many fruit or veg purees. It really depends on what flavor profile you're going for. Perhaps pumpkin or squash puree would work. It's possible you could just sub another liquid like plant milk--soy, almond or whatever--for the oil, or maybe even sub water or veg broth. Or if it's a large amount of oil in the recipe, you could do a combo substitution of part puree and part liquid. You could also try a chia gel (water thickened with chia seeds) or a watery ground flax seed mixture.

It might require playing around with the recipe a bit. When I make pancakes I just skip the oil, and add a little extra plant milk to get the right consistency.

I’m guessing you’ve made the muffins at this point. What did you end up doing, and how did they turn out?

Pureed corn works well. It tastes almost like butter.

I think that's a great idea. It does taste a bit like butter. It is sweet but in a mild way that works well with savory spices. Think savory corn bread

According to Jill

Vegan Blueberry Muffins Recipe Baked in Donut Pan

1/2 cup oil = 1/2 cup applesauce = 1 apple + 2-3 T H2O

1.5 t Ener-G Egg Replacer + 2T warm H2O = 1 egg
OR
1 T ground flax + 3 T H2O + 10min soak = 1 egg

To convert a Regular Oven Baking Recipe Temp (e.g. 400ºF) to the equivalent Convection Oven Baking Temp, subtract less 25ºF
(i.e. 400ºF - 25ºF = 375ºF).

I still use applesauce. The sweetness wasn’t noticeable.
