Vegan Gummy Bears....

Postby patty » Mon May 22, 2017 7:09 pm

I decided to try and make vegan gummy bears. I found this video: https://www.google.com/search?q=vegan+g ... #kpvalbx=1

I ordered some larger gummy molds from Amazon.

Wow Patty, I never realized how Gummy Bears were made - and here you found a recipe. Let us know how they turn out. If I ever have a need for candy - I would try this.

Yea, I am pretty sure any of the fruit snack that have Gummy Bear texture use gelatin. I used to make Anja's No soy and nut cheese with the agar agar. In the islands they use agar agar for desserts. I found this video for the process interesting.. https://video.search.yahoo.com/yhs/sear ... tion=click Of course the ingredients I wouldn't use as they are kayo syrup, gelatin and jello.. I would the vegan ingredient as they use maple syrup and fruit/cherry flavoring, or blended frozen fruit/cherries with the agar agar.

Oh my gosh, who knew they'd be so easy? I've got about 14,000 recipes open in various tabs on my computer, but this one is getting fast-tracked! I've been very sad that there aren't really any McDougall-approved candies available without home-making them.

Yea, Dr. McDougall shares it is our nature, to look for sweet foods. It is really the fat and oil, that I have to watch out for, not so much sugar and salt.

Patty, they should work out great. I've made desserts using agar powder, but I never thought of making gummy bears. Great idea! There are so many great recipes for using agar (also known as kanten). Here are a couple of nice ones.

What a beautiful presentation and instructions. She clarified for a more jiggling effect to use less agar/kanten. Prior when making desserts I don't think I added any sweetner other than fruit. It would be great if she had a vegan cookbook. I would have purchased it.

Well I defrosted about 2 cups of triple berry mix, added some water, with 3 small packets of agar, heated with medium heat, then added maple syrup and brown sugar. After bringing to a boil, poured into two Pyrex dishes, jelled in refrigerator. Cut into squares tastes really refreshing from the berries/ingredients used. A jiggling effect. I can't imagine them not being refrigerated.. say to put in plastic bags. I could use a small container.

I had bookmarked the below site when I was making Anja's no soy no not cheese. There is a gummy bear recipe using pureed fruit. I imagine pureed vegetables would work.

The below link is for lemon squares. I really like the thought of making them and of course gummy bears too. I saw some caution in using acidic fruits. My daughter has a lemon tree and squares just by themselves would work. In the islands they have a really great ginger/lemon juice. My daughter has a lemon tree. What I had forgotten was the digestive benefits of the agar agar. And of course using Okinawa sweet potato is always a option as I made prior as a dessert. I didn't have a crust, but today just with ground oats and sugar that is possible. The prior hook was making a soy cream topping with aquafaba, which today wouldn't be a option:)

The Gummy Bear molds came. I used 1 1/4 cup of water, 2 teaspoons of agar agar, tart cherry pure nation, lime juice and maple syrup. They turned out pretty good.

Wow Patty - those are absolutely adorable. And they look like something that would come out of a package from the store - only here you know what ingredients you used. Excellent work - thanks for posting.

They taste good.. and the ingredients are great. They don't have the chewiness of DAD (death American diet) gummy bears:) In googling it seems when left to dry out they become chewy.
