I love this recipe when I'm short on time to cook. The southwest seasonings are perfect. it's quick to prepare and great on quinoa, potatoes, sweet potatoes, greens and in tacos!

I am definitely making this today:).
Update: I made this for lunch and it was really good. I used canned corn, and the whole thing about three minutes to throw together!
