roadkill potatoes

roadkill potatoes

My wife takes a bag or two of small microwave potatoes, and microwaves them.
Then, she smashes them flat on a parchment paper lined baking sheet.
Spice to taste. we use: black, pepper, paprika, garlic powder, onion powder.
(hint: put the spices on the parchment paper first, then the potatoes, then more spices)
Bake at 420 degrees 12 min. flip another 12 min.
Delicious!

My wife wasn't too happy about that, for some reason...

Actually they sound pretty good. Maybe have potato skins type taste could add refried beans and faux cheese. And I would be careful in how I treat the chef:) There are only so many ways you can cook potatoes.

Just letting you know that I tried this and it was sooo good. I could eat this every day -and maybe I will :).

Also, I like the name and I am definitely demented, (at least t about potatoesLOL).

I love the name roadkill potatoes too............but your wife would probably be happier if you called them "smashed potatoes". Most of the recipes on line for smashed potatoes call for drizzling oil on them so it's always nice to see smart, tasty smashed potatoes without oil.

And I love the label Roadkill Potatoes. More entertaining than Smashed Potatoes.
