Came across an interesting youtube video today for a beefless stock seasoning powder. You can omit the oil.

https://www.youtube.com/watch?v=zRa6zljXxZM I'm sure you could omit the oil both for sauteeing the mushrooms and in the dumplings. I've made similar square dumplings for bean soup before. You could also use white whole wheat or ww pastry flour or a mix of either with all-purpose flour.
Her fat free spicy potato wedges also caught my eye.

I often blend dried mushrooms into a powder to add to my soups. I'm going to try her recipe, looks great. I'm intrigued by the addition of instant coffee to the mix.
Her potato wedges look awesome too!

Great videos.. I missed this and had forgotten ground dried mushroom can had a beef like taste.
