Looks good. I'd probably like the addition of masa in the cornbread. Make it taste more like a tamal. I used to make baked tamals (Rick Bayless recipe) once upon a time. A tamal has a top and bottom crust, rather than just a top. Of course, back then the tamal batter was full of fat, and the filling was full of dead animals.
I know there are fat-free tamale batter recipes floating around, but I've been too lazy to recreate a vegan version of a tamal on my own.
