I wanted to share this great recipe for a Quick Cornbread Casserole. It's simple to prepare and really hits the spot.

Looks good. I'd probably like the addition of masa in the cornbread. Make it taste more like a tamal. I used to make baked tamals (Rick Bayless recipe) once upon a time. A tamal has a top and bottom crust, rather than just a top. Of course, back then the tamal batter was full of fat, and the filling was full of dead animals. :\ I know there are fat-free tamale batter recipes floating around, but I've been too lazy to recreate a vegan version of a tamal on my own.

If masa isn't available, can I just use more cornmeal?

I would substitute another flour for the masa rather than adding more cornmeal.

Thanks for the recipe -I love anything corn-based :).

To make a nice oil-free tamale, there's a good McDougall recipe in one of the archived newsletters.

I am an extremely lazy cook, but even I could make this and have it turn out well! It was so easy!!
