Annual Reposting of Harvest Bake--my fave winter recipe

I post this occasionally, so here goes again!

I am not sure where it came from--either a McD book or Joanne Stepaniak. And I've made changes to it over the years anyway. It's simple, uses winter veggies, and is SO great and satisfying. Made it last night and am looking forward to leftovers tonight!

HARVEST BAKE

Cut up a bunch of root veggies. I usually use approximately equal amounts of: carrot, parsnip, turnip, potatoes (usually more than one kind--new potatoes and Yukon golds are great), sweet potatoes, onions, and sometimes beets or rutabagas. This time I also added red cabbage and whole baby portabello mushrooms. I make the pieces of everything pretty big.

Put them in a baking dish w/a cover (largest one you have!). Add 1/2 cup water and 1/8 cup Braggs Liquid Aminos (or soy sauce, but IMO Bragg's is better). I sprinkle on cumin b/c I love it, black pepper, and garlic powder.

Cover and cook at 400F for 30-45 min, or until you can easily pierce the harder foods w/ a fork. Serve over brown rice or other grain.

It is very simple but SO YUMMY!!!

I made this last night for dinner. It was very good, but it took a lot longer than the time given. It took over an hour and I was cranking up the heat the last half hour.

I do something very similar, minus the nightshades. I use Coconut Aminos since I can't use soy, and sprinkle everything with dehydrated onion and garlic. I cover the pan tightly with 2 layers of foil and bake for 1 hour at 400 rotating the pan and giving it a good shake every 15 minutes. Sometime I'll break up a head of cauliflower and add it, or add a handful of fresh Brussel sprouts. Last time I made this I used yellow beets. I'll do a sauté of onions, garlic and kale as a side dish and make some onion gravy. Such a satisfying meal. Thanks for posting this. I know what's for Sunday dinner tonight. :-D

Katydid, what are coconut aminos? I avoid soy too. Do you get it at WF?

I LOVE Coconut Aminos. Chef AJ turned me on to them. They are an excellent substitute for Bragg's Liquid Aminos, and taste much better, too. I use then in stir frys, baking, gravies, and spritzed onto air-popper popcorn. They're not just soy-free they're gluten-free, too!

There are very few processed foods that I couldn't live without, but this is one of them. :D

I don't know how much cumin LOL. I am a "seat of my pants" cook. I love cumin, so a lot--maybe 1 T?

I don't like veggies too done so if you DO like them mushier you will need to cook it longer. I don't make too many things that involve the actual oven--everything I make is stove top or m-wave and if stovetop I usually usuallly m-wave first to speed it up--this is one thing I don't mind waiting for. I just love all the root veggies and the way it tastes!

They have about 65% lower sodium than Bragg's: 133mg per tsp. for coconut aminos vs. 320mg per tsp. for Bragg's. So they are much lower, but not to JeffN's version of low.

Ah, OK. This is the only thing I use Braggs for anymore, but in future maybe I'll try the coconut aminos instead and see what I think! Is the taste similar?

I like the taste MUCH better. Bragg's always had a strange aftertaste to me that left a bad taste in my mouth. I don't get this with the coconut aminos, which have a very mild flavor. Very good on air-popped popcorn.
