The Not-So-Famous Non-Cheese Cheesy Potatoes

Seeing the Facebook post last night on FOK for goodies for Super Bowl XLVI. The first recipe for hearty nachos caught my eye, but it was the cheese that looked oh so cheesy. I looked in the pantry and had all the ingredients, so I gave it a whirl. The cheese turned out good (I guess) since I have nothing to really compare it to since it was my first time blending a cheese.

This morning, I decided to create non-cheese cheesy potatoes. Here is what I did.

Ingredients
2 russett potatoes
1 medium tomato, chopped
1 zucchini, granted
1-2 cloves garlic, minced
1 tsp cumin
1 tsp red chili peppers
pepper
3-4 Tbsp non-cheese cheese

Directions
Chop potatoes and place in non-stick skillet, add cumin and red chili pepper. Over medium heat add garlic and water, cover. Add water as necessary. When potatoes look soft add the zucchini and tomato, Stir together. Turn off heat and add the non-cheese cheese. Stir together and serve.
