Thanks Lyndzie! I did post a link to my 500th recipe review on Facebook, and tagged Robin Robertson so she'd see it. She was very happy and supportive (and has been throughout my project), I hope I'm doing her cookbook justice!!

I recently made a pasta sauce much like you did, with an eggplant and canned tomato (I used whole). So yummy!

Hi Lyndzie! Yes, eggplant in a pasta sauce just dissolves into the mixture, adding a rich, thick, creaminess to the mix. I really liked this sauce I made from 1000 Vegan Recipes, I'm finding I'm more of an eggplant fan than I thought I was, or used to be.
