I just make things up with whatever is available. More a formula or template than a recipe. I almost always include some chopped onions and either cilantro or parsley, and commonly include chopped cabbage. The inclusion of greens like cabbage and other fresh vegetables, and Asian flavors make it different from Latin rice and beans with salsa.
Many possible combinations.
Rice: brown rice
Legumes: beans, chickpeas, lentils
Vegetables: onion, green onion, cabbage, carrot, tomato
Dressing: lemon, lime, cilantro, hot sauce
Today for lunch I had
brown rice
chickpeas
pickled carrots and wax pepper chilis
fresh pico de gallo salsa (onion, tomato, chili, cilantro, lime juice)
