GeoffreyLevens--mmm....Disappearing Lasagna sounds good; I'll check it out! LOL--it can sound funny eating beans for breakfast, etc., but it sounds perfectly normal to me. :)

Lindsey---Thanks for the clarification on Kite Hill. Saw Kite Hill yogurt and yes, it was rich! Still haven't gotten to Whole Foods to see their "cheese" spread. ... Glad Oasis is sold by you, too! You'll probably find it rich as well, but it's great for people who are used to rich food.

This time of year, the Thanksgiving and Christmas Holidays frighten many people who eat a healthy diet. They wonder how to socialize with friends or how to prepare a meal in their home. Lindsey--Thanks for the heads up and link from Ann and Jane. They always make me laugh, too; I love their dynamic and intro/extro(?!) with them running. ;)

fOOdie--Yes; looks soooo yummy! I'm going to have to make that. Unfortunately the majority of our Thanksgiving guests wouldn't eat it. Most don't like mushrooms, celery, and cranberries. They don't know what they're missing. :roll: I still have to watch Dillon's video; thank you for the link.

Even though I'm not much of a recipe person and usually just throw things together, when it comes to company coming over for dinner, I don't want any surprises. :nod: I also find it neat to refresh some of the traditional dishes, hence my looking into various recipes for the Holidays.

I’m not a fan of pumpkin, but I’m thinking I using the crust and filling it with chocolate pudding topped with coconut whipped cream. I’m also trying not to encroach in other people’s usual foods (one person brings apple pie, another coconut cream, etc. I can’t compete with butter!).

Anyone making rolls?

Re: whipped coconut cream, have you ever made it from tofu? I made the coconut one a couple of years ago. It was yummy but too rich for us.

Well, I just got assigned rolls this year. Hopefully those potato rolls are good! I’m going to do a test run today.

Thanks for the FOK link, Lindsey. Mmm...rosemary and garlic = yummy! Yes, I'd definitely do a test run, though--regardless of which recipe I would use if I've never made them before. With these biscuits, make sure you read the comments--only makes 8 and some people had theirs come out heavy. If I didn't feel the need to do a test run, I would love to make rolls...but time-wise I'm not so sure. Please let us know if you did/do and how they turned out--thanks! :)
P.S. I just re-read your post and realized that it sounds like you were still planning on trying the potato roll recipe.

PURE GENIUS, M+M!!

I had decided to bring my own meal to Thanksgiving, and had settled on acorn squash as a portable and delicious main. I usually stuff it with a mixture of barley and fennel. Adding cranberries and topping with chopped walnuts will give it a more “holiday flavor”. Thank you!

Okay, so I probably should have waited and posted my above post in combination with this one, but I didn't know I was going to post anymore now. Anyway...I still want to make an actual turkey alternative for my vegetarian guests (not "just" a stuffed pumpkin...besides, some of them don't even like squash :shock: ), so I think I finally came across the one I'm going to try this year. I like that it has no oil in the recipe and not tons of tofu. That it's gluten free does not matter to me, but you never know; that aspect may appeal to some guests (though they haven't disclosed this to me). Have any of you ever made this particular recipe? I know it could be healthier by being lower in fat and sodium, but it is a holiday afterall...a (healthier) feast day/meal.
