UC sufferer now constipated on elimination diet

My mom is in her 70s and has suffered a long time with diarrhea. More recently, she was diagnosed with ulcerative colitis. Things got so bad, she went on Dr. McDougall's elimination diet (https://www.drmcdougall.com/health/educ ... s-to-food/). She started 12 days ago.

Now, she is suffering from constipation with one or fewer bowel movements per day that are hard to pass. She believes she is drinking enough water. She is very strictly adhering to the diet. Right now, she eats sweet potatoes and rice with the vegetables listed on the diet and occasionally cooked fruit listed on the diet. She tried adding potatoes on day 8 and had problems on day 9 so removed potatoes, then waited. Constipation has been an issue since the start of this diet.

What would you recommend she add or change to her diet? She can add a new food in a couple days.
