White Rice, Arsenic, and Jeff's cooking method

Jeff,

I use your method to cook brown rice and it comes out perfectly. However, I've also tried it on white rice. First I soak overnight, then rinse, then cook using a 1 cup rice to 6 cup water ratio. I boil for 15 min (not 30), drain, and let it set for ten minutes. It comes out very mushy.

How do you adjust your recipe for white rice? Any tips would be appreciated.

I can’t say. I use white rice to make a congee on occasion and use 1 cup rice to 8 cups water and it comes out fairly soft.

You might try cutting the cooking time to 10 (or less) minutes
