My Omega confusion

..I've done forum searches.

But, I must have missed on the basics. Most of the discussions assume that I know something about the topic! I don't even know the target ratio!

I don't like ground flaxseed added to my oatmeal (and I've been skipping breakfast).
I like walnuts and could eat 1/16th of a 1 lb. bag on any given day, except that I'm currently doing MWL and concerned about heart health.

I don't know if I should worry about essential fats. Today's worry comes from a Dean Ornish online blurb.

Should I be comforted in thinking that since I eat whole foods, low fat diet that I'm most likely just fine when it comes to this detail?

What are the symptoms if my ratio is out of whack, or if I'm not getting enough essential fats?
