20 potatoes a day

Hi Jeff,

I saw (via John McDougall and FOK) your write up on the 20 potatoes a day guy.

At the end of it, you state "I would not recommend an all potato diet for the long-term for anyone."

I was thinking of an all potato February, or perhaps only eating:
potatoes
spinach
broccoli
oranges (I ordered some Honeybells that I expect in Feb.)

..any caution about an all potato February, or the alternative w spinach, etc.?

My comment is in regard to long-term, not short term.
