My Unprocessed February

I'm intending to stick to whole foods this month.
Posting here helps keep me on track.

Feb. 1

Breakfast: Oats with cinnamon and hot water.
Lunch: Bag of frozen broccoli and leftover mashed potatoes.
Dinner: Brown rice with broccoli and cauliflower.

Snacks: one banana, one Sumo and one Honeybell.

Happy Groundhog Day!

breakfast: Oats with cinnamon and hot water
lunch: 3 boiled redskin potatoes and a Sumo
dinner: oven fries and steamed broccoli

snacks: one honeybell, one apple and one banana

I overdid it on the fruit... There's just such wonderful citrus around these days!

Hi Amy!

A Honeybell is a sweet, juicy variety of orange, only available around this time of year.

Feb. 3

Breakfast: Oats with cinnamon and hot water.

Lunch: Mixed vegetables (peas, corn, green beans and carrots) home fries (3 boiled redskins from the fridge sliced up and heated in a pan). One Sumo.

Dinner: (Ate at restaurant) Two baked potatoes and steamed veggies (broccoli, green beans, carrots and something yellow that otherwise looked like sliced carrots).

Snacks: one banana and one Honeybell.

Feb. 4

Breakfast: home fries (2 boiled potatoes from the fridge, sliced up and heated in a pan)
Snack (or early lunch?) I had an early serving of rice and beans - my wife was cooking a batch, so I had some.
Lunch: Rice and beans, bag of broccoli, apple.
Dinner: Mashed potatoes and steamed spinach.

Somewhere along the way, I had two Honeybells.

I plan to concentrate on more greens this week, or at least try to get some more salads.

I usually have the same thing for lunch.
Here's my typical lunch of rice and beans, bag of frozen veggies and an apple (tomorrow's lunch):

Monday, Feb. 5

Everyone's dragging today - post Super Bowl.. !

Breakfast: Oats with cinnamon and hot water.
Lunch: I started with a salad of iceberg lettuce and spinach
Rice and beans, bag of carrots, cauliflower and broccoli, apple (as pictured, above).
Dinner: Oven fries, fresh cauliflower steamed just perfectly - delicious!
Snack: One Honeybell

17.8% through February.
Can't wait for spring!

Feb. 6th

Breakfast: Oats with cinnamon and hot water.
Lunch: I got a lot of fresh spinach from the salad bar and microwaved it, then the usual: Rice and beans, bag of carrots, cauliflower and broccoli, apple (as pictured, two above).

My mom is 93 and she's sick with pneumonia. I spent time with her after work. Rough day. Late dinner.
Dinner: Just potatoes, two plates of home fries.

Some days are harder than others. My friend's 29 year old son crashed into a tree and died yesterday.

Oh no! Your poor friend! :( and I'm sorry your mom isn't doing well. But you're holding on and so smart to have those freezer steamable veggies available. I'm going to follow your idea up in my own lunches. :)

Feb 7:
Oats w cinnamon and hot water for breakfast.
Rice and beans, frozen carrots, calif lower and broccoli for lunch.
Roadkill potatoes with steamed fresh broccoli (yum) for supper.
Honeycrisp apple for dessert.

I stocked up on some more Sumos in the evening and ate two of them when I got back from the store.

I'm sure enjoying this February (food wise)

afternoon snack - I mixed it up by bringing some raw carrots to work.
Dinner: Brown rice, steamed fresh broccoli and cauliflower
One Honeybell for dessert

This food is making me feel good!

Unusual day..

Early Breakfast: Oats with cinnamon and hot water.
Snack: one Sumo
Late Breakfast: Home fries
Lunch: Mashed potatoes

With apologies, as I generally don't like to mention anything "off plan," here. But, in the interest of honestly journaling my February..
Before I decided to do an "Unprocessed February," I had agreed to go to a Wine Tasting fundraiser for a local historical building fund. My son had invited me. I had some wine and crackers this evening.

Dinner: Mashed potatoes.

I'm curious, landog, what processed foods are you leaving out that you might have eaten before? Your meals sound routine, just like mine. You say you are loving your food, and I'm loving mine. I might think I am tired of rice with broccoli and garlic again, but when I start eating it tastes great.
