Today's Plan:

Breakfast: Oat Bran & Grapefruit

Lunch: Leftover chickpea hummus wraps. (oh my gosh they are so good)

Dinner: Curried potatoes and peas over rice

Stuck to the plan. Had an apple after dinner.

It's exciting to read how great you are doing, Debi!!! I believe you will reach your goal this year! Thanks for all the great food ideas, and links to the recipes! It's fun to get new ideas!

Glad to hear your dh and ds are being more supportive and eating enjoying the food you're making! What a huge relief that must be!

Today's Plan:

Breakfast ~ Pancakes and Grapefruit

Lunch ~ A huge salad with lots of veggies

Dinner ~ Tacos (tortilla shells, non-fat refried beans with taco seasonings, rice, corn, salsa, lettuce)

I also plan on making some more peanut butter cookies with my son today. The boys have been begging me to make them again. :-D

I am going to try and make a loaf of gluten free bread in my bread machine again. I haven't been having much luck now that I am replacing eggs. It is like a brick. Hopefully today will be a better try with a new approach. :)

Great day. Followed plan, but added a few sunflower seeds to lunch salad and had some potato curry with it. I had 2 peanut butter cookies. I just made a small batch of 12 so we wouldn't eat too many of them. :)

Dinner: Rice pasta with homemade crockpot Marinara & Salad

Today's Plan:

Breakfast: Oat Bran & Applesauce

Lunch: Mashed potatoes and vegetarian baked beans

Dinner: Potato Corn Chowder (rice milk, diced potatoes, corn & seasoning) (my son's favorite) Broccoli

Changed dinner, but otherwise stayed on plan. Made Mac - n - cheeze for dinner with peas (a sauce with nutritional yeast and rice milk with some seasonings) It was good. I also added a cucumber mid afternoon with some fat free wasabi dijon dressing.

Today's Plan

Breakfast: Oat bran and applesauce

Lunch: A large green salad with my new yummy fat free dressing (wasabi dijon), white rice with spicy peach salsa (fat free) and a few baked tortilla chips.

Dinner: Potato Corn Chowder

Breakfast and lunch stayed totally with the plan. Made spaghetti noodles with a mock cheeze sauce and corn. Yuk. :\

Otherwise - great day. I took another long walked and stretched this time so hopefully will avoid leg cramps tonight. :)

Where did you get the ff wasabi dressing?? What brand is it or did you make it??

I really need some FF dressings that are not just vinegar tasting. :)

It is a Maple Grove Farms of Vermont Dressing. It is the first time I have seen it. :) But it is good.

Yum some if your meals sound delicious. How do you prepare ur curry potatoes? And the hummus wraps? Is there a recipe site I can get these and more?

The hummus wraps were actually this recipe:

The Potato Curry...

4 potatoes, peeled and cubed
1 yellow onion, diced
3 cloves garlic, minced
2 teaspoons ground cumin
4 teaspoons curry powder
4 teaspoons garam masala
1 (1 inch) piece fresh ginger root, peeled and minced
1 (14.5 ounce) can diced tomatoes
1 (15 ounce) can garbanzo beans (chickpeas), rinsed and drained
1 (15 ounce) can peas, drained
2 cups milk alternative

Boil the potatoes. Mix rest of ingredients in a separate pan starting with the onions in a little veggie broth or nonstick pan... add the rest of the ingredients and simmer for a couple minutes than add potatoes.

Looks like cooking rhythm. Meals sound good.

Potato Corn Chowder sounds interesting, do you have that recipe too? Something to make tomorrow...

Various wraps are a favorite of mine. I like to make wraps with any combination of rice, beans, salsa and salad. The rice, beans, salsa and salad all change. (Tonight: lavash wrap with tomato rice, chickpeas (can), home made salsa and cole slaw.)
