Today was my 6 hour school day. I took a day off from work as I had two tests to prepare for.

So...

Breakfast
Oats
banana

Lunch
Big plate full of leaf lettuce and spinach
Mexican brown rice and bean casserole

School snack
an apple and an orange

Late night bite
brown rice with fresh salsa

Steamed kale and bok choy
Boiled potatoes, cubed and pan seared with onions

Lots of greens today!
Then I veered off the October plan a bit..

High school football game
Baggie of roasted peanuts

Post game
glass of wine

I have lost about 60 lbs and never thought I'd be in the 150s ever again. cured my NAFLD!! Feel great!! Wt loss is so good for the knees and back, ankle, that I know I will never start back to the SAD way of eating again.

we made Jeff Novick's longevity soup
and had it over brown rice

The recipe we used for Jeff Novick's longevity soup was the one in the April 2010 McDougall newsletter (second recipe listed). We threw in some collard greens and kale towards the end of preparing it. We left the starch out of the soup, but served it over a good helping of brown rice.

You can find slight variations of this recipe online here and here (pretty interesting one), or just make up your own!

My wife said it's very close to her "Christmas soup" (mostly red and green):

Dee's Christmas soup
Can of diced tomatoes
can of tomato suace
2 cans of water (rinse out the cans of tomato)
kale (lots)
chopped onions
sliced carrrots
1/2 - 1 lb. frozen corn
black pepper
paprika
orgeno
basil

Bring to boil, then simmer 20 minutes.

I'm eating a bowl of what looks like Dee's Christmas Soup: green and red, with a few carrots thrown in. Tastes GOOD, too, over baked potatoes.

Are you tracking anything, like weight or blood work or anything? I love seeing people's results...mine especially :lol:

Old tricks, new tricks

Lunch was nothing new. I rely on frozen veggies a lot!

The web is called a web because there are so many links that can take you anywhere. Last week I started searching for 'Esselstyn greens' and I ended up at the McDougall April 2010 newsletter. That gave me the idea for yesterday's Logevity Soup. Today I thought I'd try Ann Crile Esselstyn's Collard Green Wraps. Both recipes were in the newsletter.

So, this dog was up to new tricks...

You start out with collard green leaves.

Boil them for 2-3 minutes.

I prepared peppers, green onions, cucumber, had some shreded carrots, chopped cilantro and had a lemon and some oil free humus on hand.

Put the humus and the other ingredients on the leaf. Spinkle with lemon juice and/or lemon zest.

Roll 'em up.

Leftover Longevity Soup over brown rice

I got my bento box today. My first thought was "why are the bowls so tiny?" :) But, we'll see if I can make it work. I have school tomorrow, so I'll give it a try.

leftover longevity soup over brown rice
peas / carrots / snap peas

P.S. Don't believe the recipe for longevity soup here when it says "4 servings!" It's more like 10! (not that I'm complaining)

Today I had a Java mid-term, followed by a Physics mid-term, followed by Physcs lab.

So, I stayed home and studied in the morning. I went to school after lunch.

Breakfast
Oats

Lunch
spinach
brown rice and vegetarian chili

Then I packed up my new bento box. I was suprised at how much salad I could pack into what looked like small bowls

Dinner (at school)
leaf lettuce and spinach
brown rice and vegetarian chili

I ate the food from the bento box about 3 or 4 hours after it was packed. I was disappointed that the rice and beans were not very hot.

My October challenge has a twist at the end of the month. I travel to Connecticut tomorrow through Monday to visit my daughter.
