Someone I know suggested I start journalling and I decided that I want to keep track of my food to keep me honest, so here I am.

I've been following this plan half heartedly for a few weeks, but now I'm ready to commit!

My wife is on board 90%. She still feels that we need some oils in our diet and doesn't see anything wrong with olive oil. I will just need to lead by example.

I did a little cooking last night to prepare myself for the next few days of eating. I definitely do much better if I think ahead and have stuff made.

This is what is ate for the day.
Breakfast - Coffee with soy milk, Barley and mushrooms
Snack - brown rice with tamari
Lunch - Black beans, collard greens, 1 small potato, salsa
Snack - baked potatoes, ff hummus.
Dinner - Festive Dal

OK, day 2. Wife is onboard. She is starting to discuss how we can make things with no oil. Progress.

The plan today:
B - Coffee with soymilk, 2 baked red potatoes, black beans and collard greens cooked in salsa. (this is my new favorite...I can't get enough!)
L - Baked Tofu, noodle soup
S - Carrots with hummus
D - Gardein chick'n scallopini, baked potato, steamed broccoli
S - Rice cake with apricot preserves

I'm enjoying the food soooo much!
It was important that she understands that I NEED to do this. She cooks dinner most nights (lucky me!!!)

Day 3
Feeling great about most food choices. Still need to do some tweaking, but overall I'm pleased. I love that no one at works gives a second look to what I am eating. They are so used to it by now.

B - Coffee with soy milk, barley and mushrooms (my new favorite breakfast)
L - Broccoli, Cauliflower and Carrots cooked in crushed tomatoes, potatoes
S - Peppers or cukes
D - ???

Well, off to work.
