He is NOT a McDougaller, or possibly even a vegetarian, but he is absolutely obsessed with eating whole, real food and with preserving food so nothing is wasted. Just as things are about at the end of their shelf life, he has a simple way to preserve them so they aren't lost, like making "instant" pickles. He has written a book which I didn't buy because I'm "downsizing" but I really like his attitude.

Thanks, judynew. That's a good reminder to consider preserving again. I used to make wonderful apricot jam, from an old apricot tree in our backyard in Nevada.

E: weights class; am very sore from gardening yesterday, and arms are very scratched from rose thorns

B: Engine 2 Firehouse Chili (sold in a carton)
L: vegan quesadilla with sweet potato, beans, onion and red pepper
D: salad from a salad bar, with Kraft fat-free raspberry vinaigrette dressing; baked potato, steamed broccoli and grilled corn

E: 10mile hike in 80F temps; feeling sore, creaky and very tired tonight

L: one can of no-salt corn; cherry tomatoes and carrot sticks; trail mix; 1/2 blueberry Clif bar
D: beer; green salad with no-fat raspberry vinaigrette; pizza topped with plain tomato sauce, fresh tomatoes, roasted garlic, spinach and mushrooms

E: 10-mile hike with 2550 ft elevation gain, in low 80F temperatures; feeling very tired

S: 1/2 granola bar; dried apricots
L: sweet potato, mushroom & onion tacos
D: beer; another veggie pizza; fruit crisp

E: 7 mile hike with only 800 ft elevation gain, however I am dragging, sore & tired. Inadequate conditioning.

L: leftover veg pizza; dried apricots
D: beer; green salad; quinoa black bean patties with steamed squash and rice; M&M candy

E: 8 mile hike - not too much vertical; feeling stronger after a couple of easy days; noticed cheekbones are appearing in my face - who knew I had those

D: green salad; quinoa black bean corn tostada with rice and asparagus; beer

E: 12.7 mile hike with 3600 ft elevation gain; toughest hike of my life, and at age 60. Thanks, Dr. McDougall!

S: large pretzel; beer; Clif oatmeal granola bar
D: quinoa-black bean patty with onions and avocado, broccoli and carrots; beer

E: six mile hike at a fast pace; not much elevation gain; feeling pretty strong

S: trail mix; 1/2 oatmeal Clif bar
D: vegetable soup and green salad; soup contained potatoes & corn; salad contained garbanzo beans

E: 8 mile hike that included 2400 ft elevation gain; I am exhausted. In the last 7 days we have hiked 61.7 miles with a total elevation gain of 10,250 feet. Great vacation.

L: leftover vegan risotto and steamed vegetables
D: improvised soup in Instant Pot, consisting of onion, garlic, celery, carrots, red lentils, broccoli, spices and vegetable broth. Just arrived home so have no potatoes. Added nutritional yeast to each soup bowl.

E: nothing.

B: oat groats, blueberries & maple syrup; have no bananas as have not shopped yet
L; brown rice, peas, corn & garbanzo beans with improvised dressing based on PB2 (defatted dried peanut powder)
D: improvised cauliflower green pea garbanzo adobo "chili" made in the IP; added a jalapeño so boy is it hot! Served over brown rice.

E: none; still recovering from horseback riding :eek:

B: skipped due to pressure of appointments & obligations
L: purchased fresh veggie spring rolls ...by this time I was "starving"...
S: Engine 2 seed crackers; I have developed a thing for these from our car trip...I can picture Jeff Novick shaking his head about their relatively high calorie density (being dry)
D: brown rice with assorted vegetables and arugula, with improvised dressing
S: this is bad - I made a batch of vegan chocolate pudding from recipe I found online - no tofu!! - (almond milk,cocoa powder, cornstarch, vanilla) and ate the whole thing...before it fully chilled.

E: back to my women's group weight-lifting class, three sessions of which I missed due to hiking vacation. Unfortunately my upper body strength has lessened and after today's class I was shakey and had trouble lifting my arms. Sigh. Obviously consistency of effort is very important at my advanced age.
Also did dog walks today, as well as some light gardening (of the bend & stretch sort), because a light rain made weed-pulling easier.
