Your mention of using up the produce from your fridge reminded me of a man named Joel MacCharles who was speaking at the Green Living Show the other day. He is NOT a McDougaller, or possibly even a vegetarian, but he is absolutely obsessed with eating whole, real food and with preserving food so nothing is wasted. Just as things are about at the end of their shelf life, he has a simple way to preserve them so they aren't lost, like making "instant" pickles. He has written a book which I didn't buy because I'm "downsizing" but I really like his attitude.

Thanks, judynew. That's a good reminder to consider preserving again. I used to make wonderful apricot jam, from an old apricot tree in our backyard in Nevada.
