I'm really loving my new snack. I cube a large yam into small cubes, maybe 1/4 inch to 1/2 inch in size, bake on my silicone mat at 400 for 45 minutes. A little crunchy, more than a little sweet, a yummy snack...

How did I go my whole life without eating delicata squash?

So yummy

So easy

Just slice in half inch slices, bake at 400 for 15 minutes, turn over, bake another 15 minutes. You eat the skin and the seeds are so yummy, too

I made this soup yesterday. It turned out really good. I used some butternut squash and some carnival squash (in place of pumpkin)
I used 1/4 tsp ground chipotle instead of fresh
I bought Trader Joe's fire roasted corn in the freezer section instead of roasting it myself, and did not use any oil

Your food ideas always sound so fun and delicious. I am seriously going to try your yam and delicate squash recipes.

I put the pumpkin corn soup on my menu for this week too. I am always looking for new ways to incorporate winter squash into my meals.

Keep posting your food and photos. It makes my mouth water.

Hi Beth,

I tried the roasted delicata squash but I don't think I roasted it long enough. It was delicious though, even still. The rind was tender-crisp and the flesh was like sweet pudding. I think the seeds should have been a little crisper though. They still had a bit of chew to them, but still very nutty and flavorful. I will try this again in the future.

I also made the roasted corn pumpkin soup, complete with roasting the corn before putting it in the soup. That was so delicious!!

I still want to try your idea to roast sweet potatoes.

Keep posting your food ideas. They always resonate with me.

I was panicking today because I couldn't find my easy split pea soup recipe...
So now that I found it again I'm posting it here so I don't lose it

Split Pea Soup
little green forks restaurant recipe
I doubled the spices and halved the salt from the original
1 small onion, chopped
1 carrot, chopped
1 stalk celery, chopped
1 potato, diced
4 cups water, divided
2 cloves garlic, minced
1 tsp basil
1 tsp thyme
1 tsp ground black pepper
½ tsp salt
1 cup dried split peas
Heat 1/4 cup of water in a large saucepan.
Cook carrot, onion, celery, basil, thyme and pepper for about 5 minutes.
Add the peas, potatoes, salt and the rest of the water.
Simmer, stirring occasionally, for 45 to 50 minutes, or until thick. I actually cook for around 2 hours because I like the split peas really soft

Just got back from vacation, was a little afraid to weigh myself. Finally got the courage a week after returning. I'm down 0.8 pounds!

When I got there I bought a cheap rice cooker to use in my hotel room and I cooked oatmeal, potatoes, and rice in it, so I had healthy meals available. I did eat out at restaurants as well, but usually only once a day...

Since I restarted back in July I am down 23.4 pounds

My total loss so far in the past year (with some backsliding) is 31.4

oh, and I finally got an instant pot from the black friday sales. It is still on sale for $68 which is a really good price (Amazon)

Amazing deal on your Instant Pot, Beth! I absolutely love mine. It is by far the most useful appliance I have ever purchased. It's a rare day that I don't have something cooking away in it at some point. I especially love not having to sit around waiting, monitoring, and stirring stuff while it cooks. Besides being great for soups and stews, etc. I personally love using it to steam potatoes and cook rice. Gosh, I sound like an advert. :o Anyway, enjoy.

I haven't taken the instant pot out of the box yet, I'm waiting for a day when I have some time to really look it over and read the info on it.
I did find a recipe I want to try, though
It looks simple and easy, which is my main criteria in searching for recipes :)
-Instant Pot Vegetable Soup-

Today I did an experiment.
I water sauteed a large onion (chopped) with one stalk of celery. Then added a bag of riced cauliflower I had in the freezer. Spices: 2 tsp curry (Trader Joe's) and 1/2 tsp ginger., a few shakes of cayenne and black pepper. Once it was heated through, I chopped a banana and put that in and heated a little, just to give it a little sweetness. It turned out pretty good. Next time I would put less pepper, and maybe include chopped green pepper and/or snap peas...

For lunch I made baked potato fries. I chopped 5 potatoes into wedges, put them in pot, brought to boil, boiled 5 minutes
Then drained them, returned to pot, added spices (2 tsp garlic powder, 2 tsp onion powder, 2 tsp oregano, 2 tsp rosemary, 1 tsp thyme). Shook the pot a few times, poured onto cookie sheet lined with silpat and baked at 400 for 45 minutes. I sprinkled a little salt on them when they were done. Just perfect. Crunchy on the outside, and soft and moist on the inside...
YUM. It was too much for lunch, so I'll have the rest for supper

Weight loss since my restart in July 26.4 pounds

Weight loss since I started a year ago 34.4 pounds

I haven't been exercising much lately so I decided I'm going to try to at least ride my exercise bike 5 minutes a day

So today was day one :)

I like to come onto these threads sometimes and admire the work people are putting in, and the steady results from the lovely starchy programme :)
