Daily simplest menu

I have been on and off of the program and just get a bit overwhelmed when it comes to making a lot of different meals. Can anyone who successfully have lost weight on living on a low-fat plant based diet share with me what would the simplest daily menu would entail that I may be able to follow. I do have oatmeal in the morning with fruit, but my lunches and dinners are tough at times.
