Many may not be familiar with the legacy of Walter Kempner, who, in his attempts to try and stop the progression of kidney disease in his patients, came across a diet that not only helped with kidney disease but also had dramatic impact on CVD, DB, HTN and Obesity. It was extremely high in carb, focusing on one single carb, which was "white" rice with the addition of some fruits and vegetables. In content, it was very similar to the MWL program. This was the predecessor of todays "rice diet.".
